360g thinly sliced roast beef, smoked beef or pastrami
Salt and pepper to taste
100g good quality mayonnaise
20g roasted garlic
1 tsp lemon pepper
200g peeled, cooked shrimps, thawed and drained
Shrimp and lemon pepper mayo
Combine all the ingredients in a clean bowl until thoroughly blended. Cover and refrigerate.
Assemble the bottom slices with rocket, onion slices (separated into rings), tomato slices and beef. Season to taste with salt and pepper and top with 2 Tbsp of shrimp mayo and the second slice of bread.
Seal the cut sides of breads and sandwich rolls with butter or a mayonnaise-based spread, then add a layer of greens to prevent the meat juices from soaking into the bread.
