  • 8 x thick slices speciality bread
  • 8 Tbsp Shrimp and lemon pepper mayo
  • 40g rocket
  • 4 onion slices separated into rings
  • 12 tomato slices
  • 360g thinly sliced roast beef, smoked beef or pastrami
  • Salt and pepper to taste
  • 100g good quality mayonnaise
  • 20g roasted garlic
  • 1 tsp lemon pepper
  • 200g peeled, cooked shrimps, thawed and drained

Shrimp and lemon pepper mayo

  • Combine all the ingredients in a clean bowl until thoroughly blended. Cover and refrigerate.
  • Assemble the bottom slices with rocket, onion slices (separated into rings), tomato slices and beef. Season to taste with salt and pepper and top with 2 Tbsp of shrimp mayo and the second slice of bread.

Cook's Tip

  • Seal the cut sides of breads and sandwich rolls with butter or a mayonnaise-based spread, then add a layer of greens to prevent the meat juices from soaking into the bread.
