We believe exceptional flavour takes time. We undertake a precise, controlled ageing process. For Lamb, we age for a minimum of 10 days, Beef for up to 55 days and Venison for a minimum of 21 days. This allows the enzymes to enhance tenderness, depth, and richness—a distinction that sets us apart from standard frozen lamb.
